Pellets are a well-balanced feed. It is especially important that each pellet is nutritionally the same. Birds cannot select which products, seeds or fruit they prefer. No, each pellet has the same composition. This prevents the bird from being fed too monotrophically.
Now, it is also important that the pellets are adapted to the bird species. After all, there are over 10,000 different species of birds in nature, more than 3,000 in captivity. Not all these birds eat the same and have the same nutritional needs. That is why we have pellets that are adapted, not only in size, but also in composition. Some might contain more nuts, or a bit more fruit, a bit more seeds... Really adapted to the bird species.
And then there is another adaptation: in order to breed well, the bird needs the influence of the seasons. By having a pellet for the resting season and for the breeding season for the same species of bird, we can imitate this natural variation somewhat.
